
Superfood Salad

Ingredients
- 200 g broccolini
- 1/4 pumpkin
- 135 g of cooked quinoa
- 125 g almonds
- 40 g sunflower seeds
- 40 g pumpkin seeds
- 40 g goji berries
- 12 spears asparagus (thin)
- 3 bunches gem lettuce
- 1 punnet blueberries
Instructions
- Place broccolini & asparagus into a pot with a tight fitted lid and 1 cup of water
- Place lid on and steam for 5 minutes until tender
- Plunge steamed veg in ice cold water to refresh
- Roughly chop gem lettuce and scatter over serving plate
- Sprinkle the lettuce with almonds, goji berries, blueberries, pumpkin seeds & sunflower seeds
- Add the refreshed vegetables
- Scoop chunks of the cooled pumpkin evenly over the salad
- Sprinkle the cooked quinoa over the salad
Notes
Instead of broccolini, you can use florets of broccoli
If pumpkin is not in season use sweet potato
Instead of gem lettuce use any lettuce available
