Simple Lentils (Plant Based, Gluten Free)
Description
Its good to build up a staple of go to simple meals and this is why I love these creamy lentils. Its protein rich but I love to add a piece of seasoned fried fish to it for a complete meal.
Ingredients
Scale
1 tbsp olive oil
1 medium onion
2 garlic cloves
2 tbsp mixed herbs
1 cup beluga lentils
½ cup cherry tomatoes
3 cups of stock
1 cup spinach (optional)
1 tsp salt for final seasoning
Instructions
- Dice onion and garlic
- Heat your oil and gently fry the ingredients until soft in a medium frying pan
- Add the mixed herbs and gently fry to release flavours
- Add the lentils, tomatoes and stock
- Reduce the heat and let the lentils simmer until water is reduced and lentils are soft to taste
- If you would like to add spinach, stir in now until wilted
- Season the final cooked lentils with salt
- Transfer to serving plates
Notes
- I love this dish also with many peas, beans and pulses
- Keep the water when you steam vegetables in the fridge and you will have your own stock to hand
