
Sesame Date Balls

Description
These sesame date balls are the perfect on the go snack. They provide a natural energy boost and they satisfy your sweet tooth too!

Ingredients
- 1 cup dates (soaked, drained & pitted)
- 1 cup almonds
- 1 cup cashews
- 1 cup desiccated coconut
- 1 pinch pink salt
- 1 pinch cardamom
- 4 tbsp white sesame seeds
Instructions
- Place the sesame seeds in a medium bowl and set aside
- Place all of the remaining ingredients EXCEPT the dates into a food processor or in a good blender
- Blend until the nuts are in small chunks, around 30 secs (depending on the blender)
- Place the dates into the mix, one by one without seeds (blender still running) until the mixture starts to bind like cookie dough (you may not need all the dates for this)
- Take 85 grams of the mixture and roll into a ball and continue with the rest of the dough
- Roll each ball in the sesame seeds to coat
- Store in the fridge for up to 1 week
Notes
If you prefer a smaller ball use 15 grams of dough for each ball – this will yield approx 10 balls
