Seasoned Sweet Potato Cubes

Ingredients

Scale
  • 3 sweet potatoes
  • 1 tbsp olive oil
  • 1 tbsp paprika
  • 1 tbsp mixed herbs
  • 1 tbsp himalayan salt (or sea salt)

Instructions

  1. Peel the potatoes (whilst the water is boiling)
  2. Cut into half, then cut into strips
  3. Turn strips and then cut again so you have evenly sized cubes
  4. Place the cubes of sweet potato into the pot of boiling water and boil for 5 – 10 minutes
  5. Drain the potatoes and place in a bowl and add the paprika, herbs & olive oil
  6. Using your hands get the potatoes fully coated with the seasoning
  7. Place on a foiled baking tray and roast for 20 minutes or until a fork goes easily into a potato

Notes

If you want to prep in advance you can peel & dice potatoes and leave soaking in water for a few hours before

If not, bring a pot of water to the boil with the salt whilst peeling the potatoes
