
Seasoned Sweet Potato Cubes

Ingredients
- 3 sweet potatoes
- 1 tbsp olive oil
- 1 tbsp paprika
- 1 tbsp mixed herbs
- 1 tbsp himalayan salt (or sea salt)
Instructions
- Peel the potatoes (whilst the water is boiling)
- Cut into half, then cut into strips
- Turn strips and then cut again so you have evenly sized cubes
- Place the cubes of sweet potato into the pot of boiling water and boil for 5 – 10 minutes
- Drain the potatoes and place in a bowl and add the paprika, herbs & olive oil
- Using your hands get the potatoes fully coated with the seasoning
- Place on a foiled baking tray and roast for 20 minutes or until a fork goes easily into a potato
Notes
If you want to prep in advance you can peel & dice potatoes and leave soaking in water for a few hours before
If not, bring a pot of water to the boil with the salt whilst peeling the potatoes
