  1. Heat the oven to 130c
  2. Grease 3 sections of a muffin tin
  3. Whisk eggs until frothy
  4. Mix the onions and red pepper into the whisked eggs
  5. Evenly pour the whisked egg mixture into greased portions of the muffin tin
  6. Place in the preheated oven for 15 minutes
  7. Remove from the oven and using a wooden spoon or spatula, gently slide around the edge of the eggs to remove from tin

You can 'up-size' the muffin size by increasing the eggs to 4 and pouring into only 2 muffins portions

This recipe is easily customizable - feel free to add additional veg - mushrooms and spinach are great options!
