
Raw Cacao Nut & Seed Bar

Description
Try a Raw Cacao Nut & Seed bar the next time you’re craving a sweet treat. The delightful natural sweetness from the dates is divine. Plus you get to incorporate a ton of superfoods which your body will thank you for!
Ingredients
Dry base
- 50 gm cashew
- 50 gm almonds
- 350 gm rolled oats
- 100 gm desiccated coconut
- 20 gm goji berry
- 20 gm pumpkin seeds
- 20 gm sunflower seeds
- 10 gm chia seeds
Wet base
- 200 gm pitted dates
- 70 gm lemon juice
- 50 gm coconut oil (melted)
Topping
- 83 gm cacao butter
- 57 gm cacao
- 27 gm coconut sugar
- pinch pink salt
Instructions
- Preheat the oven to 160c
- Grease an 8×8 baking pan and set aside
- Put all ingredients for the dry base in a food processor and pulse until chunky and then put in a medium mixing bowl
- Blend the ingredients for the wet base until smooth and then add to the mixing bowl
- Mix until fully combined
- Put the mixture in your prepared baking pan – using the back of your spoon (or your hands) spread the mixture evenly
- Place the pan in your preheated oven and bake for 20 minutes or until golden brown & firm
- Cool completely
- Meanwhile, melt the cacao butter
- Add the cacao, coconut sugar and pink salt to the melted cacao butter and stir until completely incorporated
- Pour the chocolate topping over the completely cooled bars & spread over evenly
- Cool completely
- Place in the refrigerator for at least 30 minutes to firm the mixture
- Cut into 20 bars and serve!
Notes
- If you cannot find Cacao butter in your local speciality shop you can find it on iHerb or substitute with coconut butter
- If you do not have a food processor simply chop the ingredients until chunky and then proceed with the rest of the recipe
