
Pad Thai

Ingredients
Sauce
- 1 tbsp liquid aminos (or fish sauce)
- 1 tbsp coconut sugar
- 1 tbsp lime juice
Main
- 1 tbsp sesame oil
- 1 clove garlic (finely chopped)
- 1 shallot (finely chopped)
- 1 serving shirataki noodles
- 2 eggs
- 1 tbsp spring onions (sliced)
- 1 tbsp peanuts (chopped)
- Red Chilli Flakes
Instructions
- Saute the onions and garlic in the oil until soft
- In a separate pot soak the noodles in hot water until soft and then strain (reserve liquid)
- Scramble the eggs with the onion and garlic
- In a small bowl combine all the ingredients for the sauce
- Add the sauce and egg mixture to the noodles and combine until heated through
- Taste and adjust seasoning as needed
- Transfer to a plate and garnish with spring onions, chilli flakes and peanuts
Notes
Use rice noodles as an alternative for a gluten-free noodle, look out for high quality versions in the Asian supermarkets.
I also like to reserve the liquid from the noodles and mix a little with the sauce to make more sauce and help the sauce to coat the noodles
