Description

Craving a satisfying iron-rich meal? Look no further! Our Flavorful Mince Meat Kebabs are the perfect solution. Packed with abundant herbs and spices, these kebabs feature high-quality minced meat that will keep you energised all day. Make a big batch and enjoy them as a dinner staple, accompanied by a selection of mouthwatering dips. The best part? These versatile kebabs can be easily adapted with lamb or chicken for endless culinary possibilities.


Ingredients

Scale

1 tbsp olive oil

1 medium onion 

2 garlic cloves

2 tbsp  mixed herbs

1 cup  beluga lentils

½ cup cherry tomatoes

3 cups of stock

1 cup spinach (optional)

1 tsp salt for final seasoning


Instructions

  • Dice onion and garlic
  • Heat your oil and gently fry the ingredients until soft in a medium frying pan
  • Add the mixed herbs and gently fry to release flavours
  • Add the lentils, tomatoes and stock
  • Reduce the heat and let the lentils simmer until water is reduced and lentils are soft to taste
  • If you would like to add spinach, stir in now until wilted
  • Season the final cooked lentils with salt
  • Transfer to serving plates

Notes

  • I love this dish also with many peas, beans and pulses
  • Keep the water when you steam vegetables in the fridge and you will have your own stock to hand

This dish can be served with my red snapper recipe or equally good on its own
