Lemon Goji Bars (Vegan, Gluten free)

Description

I love this Lemon Goji treat because it can be keto-friendly, made with only the 4 main ingredients or made in a luxurious Christmas bar with more treats inside. With no baking required, expect to make this as your quick and regular treat to keep everyone happy.


Ingredients

Scale

4 cup shredded coconut

1 lemon rind & juice extracted 

⅔ cup coconut oil

½ cup sticky sweetener (raw honey, agave, rice syrup, coconut sugar nectar)

1 cup goji berries

½ cup cacao nibs

1 tbsp chia seeds


Instructions

  • Line an 8×8 inch baking pan with parchment paper
  • Pour all the ingredients into a large mixing bowl and fully combine
  • Place the mixture in the lined tray
  • Using the back of a large spatula press the mix firmly into the pan
  • Place in the freezer to firm for 30 mins
  • Once firm, using a lightly greased knife cut into slices

Notes

  • If you can only find coconut flakes then blend in a processor to get the required amount. Coconut flakes are also nice pre-toasted for 3 mins on a medium heat
  • Lemon and sweetener can be adjusted for your personal taste preferences when making Lemon Goji Bars
  • The first 4 ingredients are the main recipe. The rest can be adjusted so you can add sunflower seeds, dried fruit such as cherries or your favourite nuts
  • Storage is best in a tightly sealed container for 2 weeks in the fridge or even better the freezer where it will last for a while longer
