Jamu Recipe (Vegan, Gluten-Free)

Jamu

Ingredients

Scale
  • 2 litres filtered water
  • 500 gm fresh galangal
  • 500 gm fresh turmeric
  • 50 gm coconut sugar
  • 50 gm tamarind paste
  • 1/2 tsp salt

Instructions

  • Wash and peel the turmeric and galangal and slice thinly
  • Place in a large pot with the water and bring to a boil
  • Once boiling turn to low and keep at a bare simmer until reduced by ½  (approx. 1 hour)
  • Strain through a fine-mesh strainer into a container
  • Stir in the remaining ingredients
  • Taste then add more tamarind or coconut sugar depending on how sweet or sour you would like your Jamu
  • Freshest if consumed within 1 week

Notes

If you can’t find tamarind paste – just buy the pulp and mix it with enough water to make a paste.

If you do not have tamarind you can replace it with 2 tbsp lime juice

The reserved turmeric & galangal can be used to make Turmeric Galangal Balls
