
Jamu
- Yield: 1 litre 1x
Ingredients
- 2 litres filtered water
- 500 gm fresh galangal
- 500 gm fresh turmeric
- 50 gm coconut sugar
- 50 gm tamarind paste
- 1/2 tsp salt
Instructions
- Wash and peel the turmeric and galangal and slice thinly
- Place in a large pot with the water and bring to a boil
- Once boiling turn to low and keep at a bare simmer until reduced by ½ (approx. 1 hour)
- Strain through a fine-mesh strainer into a container
- Stir in the remaining ingredients
- Taste then add more tamarind or coconut sugar depending on how sweet or sour you would like your Jamu
- Freshest if consumed within 1 week
Notes
If you can’t find tamarind paste – just buy the pulp and mix it with enough water to make a paste.
If you do not have tamarind you can replace it with 2 tbsp lime juice
The reserved turmeric & galangal can be used to make Turmeric Galangal Balls
