Homemade Nutty Granola

Ingredients

Scale
  • 500 gm oats (preheat the oven to 140c)
  • 100 gm mixed nuts
  • 100 gm mixed seeds
  • 50 gm sultanas
  • 50 gm goji berries
  • 1 tsp cinnamon (or to taste)
  • 3 tbsp rice syrup

Instructions

  1. Pour the oats onto a large baking tray, try to get as evenly distributed as possible
  2. Sprinkle with the seeds, the crushed nuts (retain the remaining nuts) & cinnamon
  3. Drizzle from a height (to distribute more evenly) with the rice syrup
  4. Bake the oats for 15 minutes in the oven, turning the mixture over after 10 minutes
  5. Remove from the oven and sprinkle over the remaining nuts, sultanas & goji berries
  6. Pour the mixture into a big bowl and stir to combine
  7. Leave to cook and then transfer to an airtight glass jar

Notes

  • Use any nuts, almonds, cashews & walnuts are my favourite but you can use one or even macadamia, pecan, hazelnut, brazil or omit nuts if you have an allergy
  • Use any seeds, linseeds, chia & sunflower seeds are my favourite but you can use one or even pumpkin seeds. Instead of sultanas & goji berries use raisins, mixed dried fruit and/or goji berries
  • Add cacoa nibs for the chocolate touch or coconut flakes for the tropical flavour
  • Blend until chunky or crush with a pestle & mortar half of the nuts I often use 2 baking trays of oats and put side by side in the oven to spread the oats more evenly on the tray
  • I love to top with fresh fruit when serving, especially blueberries or strawberries in season (preferably organic as berries are high in pesticides!)
