
Hazelnut & Cacao Muffin (Gluten-Free)
Description
Usually I like to have nutrient dense muffins like this for breakfast. 🥮
I replace all the processed ingredients for whole grain gluten free flours such as the millet flour 💚
I place healthy good fats inside such as cacao butter which is also dairy free and I used unrefined natural sweeteners such as cinnamon, vanilla extract and coconut sugar. 🥥
Making a tray of 8 can mean 2 days of quick breakfast sorted!

Ingredients
60g Cacao butter buttons
175g Millet flour
1 tsp Baking Powder
120g Coconut Sugar
1/4 tsp Salt
1/2 tsp Cinnamon
1 tsp Vanilla Extract
1/2 tsp Baking Soda
1/2 tsp Ginger Powder
60g vegan butter
1 Egg
90g Cacao Nibs
6 Hazelnuts
Instructions
- Melt the cacao butter
- In a bowl place millet flour and baking powder
- Add coconut sugar, salt, cinnamon, vanilla extract, baking soda, ginger powder to the butter
- Whisk vegan butter
- Whisk in the egg using a fork or a whisk
- Combine the butter and flour mixture
- Sprinkle in the cacao nibs
- Pour into muffin tray or moulds
- Place a hazelnut in the centre
- Bake for 180c for 12-15 mins
