
Grain & Nut Free Breakfast Cookie
Description
Cookies for breakfast?? You can absolutely have cookies for breakfast when they are packed with healthy ingredients. These cookies are healthy and delicious and the perfect go-to when you are running late getting out the door. You are going to want to keep these made up ahead so on those busy mornings you have no prep – just grab and go.

Ingredients
1.5 cup coconut flakes
2 bananas
¼ cup walnuts
¼ cup dried cranberries
¼ cup cacao nibs
1 tsp cinnamon
Instructions
- Preheat the oven to 160c
- Line a baking sheet with baking paper
- Pulse the coconut flakes in a food processor until small pieces
- Remove then blend the banana until smooth
- Combine the rest of the ingredients with the banana & coconut in a mixing bowl
- Spoon out 2 tbsp at a time of the batter mixture into dollops on your baking sheet
- Press mixture with a back of a spoon to flatten to cookie shapes
- Bake for 10 minutes or until the edges are golden brown then flip over for an additional 5 until firm but not burnt
- Leave to cool and firm up on a wire rack
- Store in a sealed container for up to 1 week
