
Fresh Summer Rolls (Vegan, Gluten Free)

Description
These Fresh Summer Rolls are an absolutely moreish vegan snack. Perfect for those times when you want something quick and tasty to eat. It looks complicated but this easy to follow plant-based recipe makes it simple to recreate.
Ingredients
1 pkt Rice paper wraps
1 head Butterhead lettuce (soft leaves)
1 Carrot
1 Cucumber
1 Mango
1 pkt Organic pressed tofu
100 ml Asian sauce
15 Fresh mint leaves
Instructions
● Preheat the oven
● Strain the tofu from the packet and bake for 15 minutes until lightly browned
● Whilst baking prepare the rest of the ingredients
● Separate the soft outer lettuce leaves
● Peel the carrot using a potato peeler to make ribbons
● Complete the same process with cucumber
● Thinly slice the mango
● Thinly slice the tofu
● Drizzle a work surface or large chopping board with water
● Place the rice paper in a wide bowl filled halfway with warm water and soak
● Take 1 lettuce leaf and fill with a cucumber, carrot & mango slices
● Carefully lift the rice paper onto your wet surface and using your finger slowly shift until its shape has been retained flat on the surface
● Add 1 tbsp of sauce in the centre with 1-2 mint leaves
● Tightly close the filled lettuce leaf and place it in the centre of the rice paper
● Fold the left side of the rice paper over the lettuce, then the bottom and finally the right to make a little envelope before closing the roll with the top
● Place on a baking sheet or slightly damp plate and repeat until all the rolls are completed
Notes
● Using a damp work surface helps to shape the Fresh Summer Rolls and prevent them from sticking to the surface that I’m working on.
● I soak the rice paper in slightly warm water to give more time to work with and keep a little firmness to make it easier to roll
● Placing most of the ingredients inside the lettuce first prevents easy breakages to the paper
● If you have an air fryer you can spread a little sesame oil over the Fresh Summer Rolls and air fry them
● I love these rolls with a peanut dipping sauce also
