
Cauliflower Cheese (Vegan, Gluten free)
Description
Cauliflower Cheese is the definition of comfort food and when looking to remove dairy one of the hardest battles can be cheese. It definitely has that addictive food design that’s not helpful for managing cravings. However, by swapping out the ingredients and creating the same consistency in this dish with plant-based ingredients you can easily make your rainy days brighter!
Ingredients
1 large Cauliflower head
½ cup Chickpea flour
3 tbsp Nutritional Yeast
1 tbsp Onion powder
1 tsp Garlic powder
½ tsp English mustard
½ tsp Turmeric powder
1 tsp Black pepper
1 tsp Pink Salt
2 cup Warm water or any plant based mylk
Instructions
- Preheat oven to 160ºc/150ºc fan
- Place the cauliflower on a roasting tray for 20 – 30 mins or until golden brown
- Place the remaining ingredients except for the water or mylk (if using) into a pot
- Place ½ cup of the water and add to the dry ingredients
- Whisk to make a paste
- Add the remaining water/mylk and simmer on a low heat
- Stir constantly to ensure no lumps and sauce thickens, roughly 10 minutes
- Place the cooked cauliflower on the serving plate and cover with the sauce
- Season with more salt and pepper if required
Notes
- To add extra vegetables to this dish I enjoy it with spinach or mushrooms
- Cauliflower Cheese can be garnished with any fresh herbs or sesame seeds
