Ingredients
1 bag of mixed greens or spinach
2 tbsp of almonds
1 tin of drained mackerel
½ tin of drained cannellini beans
1 jar of mixed olives and peppers
Instructions
- Place the mixed leaves into a mixing bowl
- Add on the remaining ingredients reserving the fish
- Combine in bowl and transfer to plate
- Add the drained fish on top
Notes
- If your tinned fish comes in extra olive oil you can use this and reserve a little for dressing, you can also buy a lemon to add juice to the dressing
- Bags of mixed nuts and seeds are also very complimentary to adding texture to this dish
