Description
If you are looking for a way to fit more green vegetables into your diet why not try broccoli pesto – it’s vegan and gluten-free! Toss it with zoodles for a delicious, easy dinner!
Ingredients
- 1 whole zucchini spiralized
- 1 full head of broccoli
- 45 gm garlic clove
- 2 tbsp nutritional yeast
- 150 ml olive oil
- 150 gm almonds
- 3 gm salt
- 3 gm black pepper
Instructions
- Steam broccoli until fully cooked
- Place almonds & garlic in a high-speed blender till fine, you may need to add a drop of warm water to help
- Then add chopped broccoli and nutritional yeast
- Blend on medium speed adding olive oil through the hole until sauce is created
- Season pesto with salt & pepper
- Place zoodles in a large mixing bowl and combine with pesto until fully coated
- Plate dish
Notes
- Aim to blend and add oil to the required consistency to thinly coat all zoodles
- This broccoli pesto is great on top of the gluten-free pizza base
