Banana Bread Cookies

Description

Banana Bread cookies are the perfect afternoon snack or a breakfast alternative to toast. It’s gluten-free and vegan so everyone can enjoy it. Kids won’t even know that bananas are included!


Ingredients

Scale

4 Large Bananas

1 ½ cup Almond Flour

1 cup Chopped walnuts 

¼ tsp Baking soda

1 tbsp Cinnamon

1 tsp Vanilla extract

1 tbsp Maple syrup or unrefined sweetener

Pinch Salt


Instructions

  • Preheat the oven 160°C
  • Line your baking tray with baking paper 
  • Mash the bananas in a small bowl with a fork keeping it chunky
  • Add the vanilla and syrup
  • Combine the flour, baking soda, cinnamon and salt in a separate bowl
  • Add the banana mix to the dry ingredients and stir in the walnuts
  • Combine well until mixture is fully combined
  • Take small handfuls of the mixture and roll into equally shaped balls
  • Place the balls on the baking tray and using the back of a spoon flatten them
  • Bake for 25-30 minutes until cooked through and no longer soft centered
  • When ready place them on a wire rack to cool completely

Notes

  • Storage is best in a tightly sealed container for 5 days (if they last that long!)
  • Trying adding nut butters for ‘good fats’ as a spread for a breakfast Breakfast Banana cookie
  • Cacao nibs or pieces of chocolate added are also nice for an indulgent snack. Yum!
