Ingredients
4 Sheets of Rice Paper
1 Apple
1 tbsp Raisins
1 tsp Cinnamon
1 cup Warm Water
1 tbsp Coconut Oil
Instructions
- Preheat the oven to 140oc
- Place the water in a shallow bowl, and have a wet plate on standby next to it
- Core and slice thinly the apple
- Dip the rice paper into the water, keeping the paper firm enough to hold and shape
- Place the rice paper on the wet place and fill with a few slices of apple, a couple of raisins and sprinkle of cinnamon
- Leave enough space to make a folder parcel with the edges of the rice paper
- Fold the left side of the rice paper over the mixture
- Follow with folding the bottom half upwards and away from you
- Fold the right side of the rice paper over the mixture
- Lastly complete the closing of the parcel by folding the top part over and towards you
- Using a pastry brush, brush the oil on both sides of the parcel and place on a baking tray
- Complete all parcels and place the baking tray in the oven to bake
- After 10 minutes remove the tray and flip the parcels to bake on the other side
- Check at remaining time and remove when slightly golden
- Leave to cool and allow parcels to firm up
- Transfer the parcels to a serving plate
Notes
You can try this recipe with a number of different dried fruits of fillings.
I enjoy this recipe with a side portion of coconut yoghurt to dip the crispy parcels in.
I like to use chopsticks to gently turn the parcel over when checking if it is cooked.
