
3 Bean Soup

Ingredients
- 1 tin kidney beans
- 1 tin of butter beans
- 1 tin of pinto beans
- 2 tins of tinned tomato
- 1 tbspn of dried mixed herbs
- 1 tsp of dried chilli flakes (optional)
- 1 finely cut garlic clove
Instructions
- Rinse and drain all the tinned beans
- Pour beans into a large pot with the tinned tomatoes
- Add the mixed herbs, chilli flakes if using and the garlic
- Give the ingredients a stir and bring to a slow simmer for 10 minutes
- Remove from heat and serve
Notes
If you have any fresh herbs like coriander or thyme replace the dried herbs with them
Feel free to use any tinned beans you like
I tend to make this as a big portion and freeze the rest, I can reduce down the sauce & use as a filler for a vegan burger patty or a plant-based taco filling
